Vegan Raspberry Oat Bars

Like so many of my recipes, I adapted this one from a non-vegan version. This particular one came from Smitten Kitchen upon the recommendation of my wonderful friend Stephanie (who also writes her own amazing blog). These are simple and freakin' delicious...your house will smell so good and your sexy ass and thighs won't start jiggling at the prospect of eating one of these chunks of heaven.
Preheat the oven to 350 degrees. In a large bowl, combine:
1 1/2 cups flour (try whole wheat...soooo good)
1/2 cup brown sugar
1 cup rolled oats
1 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
1/2 tsp baking soda
1 1/2 sticks Earth Balance Vegan Butter at room temp (This stuff is amazing. Get to know it.)

Smoosh the butter and the dry ingredients together until loose crumbs form. It'll take a minute or two. Reserve about 1 cup of the mixture for later, then press the rest into an even layer in a greased square cake pan. Bake until golden brown, about 12 minutes. Leave the oven on, and let the crust cool for 5-7 minutes. Then, grab:

1 cup raspberry jam, a good kind (you can change up the flavor too...blackberry is awesome!)

Spread the jam over the warm crust with a big spoon. Crumble the remaining crust mixture over the top and bake for another 10-15 minutes, or until the filling starts to bubble around the edges. Cool completely, cut into squares, and prepare to have an orgasm in your mouth.

  1. I will try these this weekend! I'm not vegan, but am vegetarian and raising my kids that way, too. Never been much of a meat eater and once we got our baby chicks last year (for eggs) I decided not to eat any meat anymore. I appreciate your perspective and witty commentary. I look forward to more recipes!
