Sweet Potato French Fries


Ahhhh the sweet potato. Nature's candy. These are so freakin' good I can hardly stand it! They don't get crispy and stiff like regular fries do, but I promise they won't disappoint. You can use yams or sweet potatoes, whatever's cheapest that day.

Set your oven at 400, and take note of any nasty smells that come barreling outta there (if that happens, you need to clean your oven. Sad but true. Sad, but fuckin' true). Grab:
2 lbs sweet potatoes or yams (about 2 big ones, 3 smallies)

Cut them into strips about 1/2" wide, but don't freak out if they're not perfect. DO NOT PEEL THEM. Dump your fries onto a big sheet pan or cookie sheet and sprinkle them with the following according to your own tastes:
paprika (lots)
parsley (fresh or dried)
cayenne
salt
black pepper

Don't mix them around yet! Before you do that, bust out your olive oil and give them a good once-over, being careful not to douse them. THEN get your hands in there and work the oil and spices around on the pan until the potatoes are all lightly coated. Add more oil if you have to, but be mindful of the grease factor. Bake for about 25-30 minutes, or until your potatoes are soft little gems of golden goodness. Dippage is possible, but unnecessary in my humble opinion. Enjoy!
