Don't buy packaged hot chocolate mix. Ever. Swiss Miss, Nestle, even Ghirardelli mixes are chock FULL of chemicals, waaaaay too much sugar, and sometimes even hydrogenated oils (that is, dried Crisco). And, they're way the hell and gone too expensive compared to...
MAKING IT ALL BY YOURSELF!!!
Did you know that if you combine sugar and cocoa powder with a 2:1 ratio that you've made perfect hot chocolate mix??!??!?! Whoa. Add a dash o' salt and you're good to go. Wasn't that EASY!?!?!
In a small bowl, combine:
2 cups sugar
1 cup cocoa powder
1 tsp salt
When you want to make hot cocoa (and on a day like today that's pretty much every hour), decide first whether you want to use faux milk or water...I go back and forth. Making cup after cup with soy milk pulls a little too heavily on my carefully-measured weekly soy ration, but the resulting cup of cocoa is soooo creamy and outta this world. It also makes my tummy really full, so I tend to use this option once and awhile. Here's how you do it with faux (ie: rice, soy, hemp, nut) milk:
First things, measure the cold milk into the snuggly mug you intend to use...this is the perfect way to eliminate waste. Pour the milk into a sauce pan and add a couple heaping spoonfuls of your awesome homemade cocoa mix. Grab your whisk and get busy mixing, keeping the saucepan at medium heat to avoid scalding (and that annoying pan scrubbing situation later). Slowly heat the cocoa until it's steaming nicely, the hotter the better. Pour it back into your cup and enjoy!
The other option is to make your cocoa with water, which is simpler and less of a burden on your resources. The water version tastes incredible without being too filling, thus allowing you to drink cup after cup without barfing. To make it with water:
Just like you're making a cup of tea, fill a teapot or saucepan with water and get it too a nice boil. While it's heating, place a few spoonfuls of cocoa mix into the bottom of your cup. Add just a BIT the hot hotty hot water at first and stir up the mix (that way you don't have to worry about spilling over the sides), then add the rest. Sip. Yum.
Add marshmallows if ya want, but keep in mind that they make you fat. Just sayin'.
