Rice 'n Veg


For when you need fuel.

This is real easy, but no one ever seems to think of "simple vegan food" as "FILLING vegan food" which is, of course, a folly. Simple doesn't mean meager, especially in this instance! I made this yesterday when I was so hungry I was actually considering stuffing my face with crappy Costco muffins (AJ got them for free, so I won't complain). Fortunately, I went for this instead.

Mix the following together in a bowl:
1 cup leftover rice
1/2 avocado, diced
1 medium carrot, diced

1 small tomato, diced

onion, diced, to taste
salt and pepper to taste
dash o' lemon juice

Stir. Eat. Be well.
